EAT: Simple Curry Chicken Salad


The following Simple Chicken Curry Salad from Operation Live Well is the perfect spin on traditional (and often unhealthy) chicken salad recipes.

Ingredients:

  • 2 grilled and diced chicken breasts
  • 1 stalk celery, chopped
  • 1/2 red onion, chopped
  • 1/3 cup golden raisins
  • 1 Granny Smith apple, diced
  • 1/2 cup walnuts, chopped

For Dressing:

  • 3/4 cup Greek yogurt
  • 2 tablespoons mango chutney
  • 2 tablespoons extra virgin olive oil
  • 1-2 teaspoons curry powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions:

  • 1. Combine first five ingredients in a bowl.
  • 2. Mix dressing ingredients into a separate small bowl.
  • 3. Pour dressing over ingredients in a bowl and mix well.
  • 4. Refrigerate for at least one hour before serving.
  • 5. Enjoy over a bed of lettuce or in a whole-wheat tortilla wrap.
