EAT: Kale Me Crazy!


This side dish is full of healthy vitamins, such as Vitamins A, C and K and as an added bonus, it is packed full of fiber so it keeps you full longer and keeps your heart healthy. Kale us crazy, but we love this recipe!

Ingredient:

  • 1 head of Kale
  • 1 large tomato
  • 1 cup of sprouts
  • ½ medium red onion
  • 1 cup of mushrooms
  • ½ crumbled feta
  • ½ lemon
  • 1 tablespoon extra virgin olive oil
  • Pepper to taste

Directions:

  • 1. Dice tomato, onion, and mushrooms and set aside.
  • 2. Pour olive oil into a large frying pan and turn the heat to medium. As it warms , chop your kale into large pieces, keeping in mind they will shrink in size when cooked.
  • 3.Once the oil is warm and spread evenly throughout the pan, toss in the diced tomato, onion, and mushroom and cook for five minutes.
  • 4. In the same pan toss in the kale and sprouts and seasons with pepper to taste and juice from the lemon and mix. Cook for five more minutes or until the kale has begun to wilt (cooked down). If you feel that the dish is starting to burn, turn the heat down and add a small drizzle of olive oil.
  • Remove from the stove. Plate your side dish and pair with fish or chicken. Feel free to crumble a little feta on top and enjoy!

  • Looking for more protein or fiber? Add some cooked quinoa or black beans to the mix!
