EAT: Leftover Recipe


Do you have a random assortment of holiday leftovers? No time like the present to take your hodge-podge of leftovers and make a quick, healthy and delicious meal to feed your loved ones! Remember to eat slowly, research shows the more chewing you do; the more nutrients your body absorbs!

Black Bean and Corn Salad from Operation Live Well

8-10 Servings

Ingredients:

  • 2/3 cup fresh lime juice
  • 1 cup extra virgin olive oil
  • 3 cloves minced garlic
  • 2 teaspoons salt
  • ¼ teaspoon ground cayenne pepper
  • 1 tablespoon cumin
  • 4 (15 ounce) cans black beans, rinsed and drained
  • 3 cups frozen corn kernels
  • Red bell peppers, chopped
  • 4 tomatoes, chopped
  • 12 green onions, thinly sliced
  • 2 avocados – peeled, pitted and diced
  • 1 cup fresh cilantro (optional)

Directions:

  • 1. Place lime juice, olive oil, garlic, salt, cayenne pepper, and cumin in a small jar. Cover with lid and shake until ingredients are well mixed.
  • 2. In a large bowl, combine beans, corn, bell peppers, tomatoes, green onions, avocados, and cilantro.
  • 3. Shake lime dressing and pour over the salad. Toss!
