EAT: Lentil And Kale Stir-Fry


This protein-packed lentil and kale stir-fry is the perfect winter dish!

    Lentil and Kale Stir Fry

    Ingredients:

    • 1 cup of lentils
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • 4 cups of kale leaves chopped (remove thick stems first)
    • 2 cups of green beans chopped
    • 2 cups of onion chopped
    • 4 cloves of garlic diced
    • 1 tablespoon fresh rosemary chopped
    • 2 tablespoons olive oil

    Directions:

    • 1. Rinse lentils with water and remove any stones.
    • 2. Cook lentils in 2 ½ cups of water.
    • 3. Add salt and pepper to the water while cooking. Bring to a boil.
    • 4. Cover and simmer for 30 minutes.
    • 5. In a separate pan, cook onions in 1 tablespoon of olive oil over medium heat for five minutes. Add salt and pepper to taste.
    • 6. Add another tablespoon of olive oil, garlic and green beans, and sauté for another five minutes.
    • 7. Add kale on top, turn heat to low, add rosemary, cover and let it all steam for 10 to 15 minutes.
    • 8. Add all ingredients into one pan, turn the heat up to medium and stir-fry for three to five minutes.
