Eat: Mushroom Stuffing


Mushroom stuffing bites are packed full of flavor, have many great health benefits, and are sure to please any fungi (guy or gal) you know.

Ingredient:

  • 1 package Button Mushrooms
  • 1 package Spinach
  • ½ Yellow Onion
  • 6 cloves Garlic
  • 6 strips Turkey Bacon
  • ¼ cup Bread Crumbs
  • ½ cup shredded cheese of choice (we love Gouda!)
  • 1 tablespoon butter

Directions:

  • 1. Preheat your oven to 350 degrees.
  • 2. Line a cookie sheet with tin foil and place your turkey bacon on top, be sure to leave a small space between each slice. Once your oven is to temperature, put your bacon in to cook. Time Saver Tip: prepare the rest of the ingredients while the bacon is cooking!
  • 3. Remove the stem of your mushroom by taking a small spoon and scoop at the base.
  • 4. Dice the stems of the mushrooms into small pieces (approximately one centimeter in size) and set aside in a bowl.
  • 5. Place the mushroom cap into a baking dish with the hollow part face up.
  • 6. Finely dice the onion, garlic, and uncooked spinach and mix into the bowl with the mushroom stems.
  • 7. If your bacon is cooked to your desired crispness, take it out of the oven, and place the pieces on a plate and dab with a paper towel to remove excess grease.
  • 8. Dice the cooked bacon into small pieces and combine in the bowl of chopped veggies.
  • 9. Heat up butter in a frying pan, set stove to medium-high heat and toss in the mushroom stems, spinach, onion, garlic, and bacon. Once sautéed, mix in the breadcrumbs and cheese and remove from heat. Continuously fold ingredients into each other until the mixture melts and is thoroughly combined.
  • 10. Scoop the mixture into the mushroom caps and place the baking dish in the oven. Cook them for 25-30 minutes or until the mushrooms are tender to touch.

Substitute: If you feel these are too heavy for your taste, remove the cheese from the mix and add an extra ¼ cup breadcrumbs!

These bites are the perfect dish for when you are craving something savory and healthy.
