EAT: It’s (Not) a Piece of Cake

Healthy and clean eating is not a piece of cake, literally and figuratively. You are constantly resisting the temptation to sneak in your favorite sweet treats and forego your healthy habits. But let’s be realistic, you cannot deny some yumminess all of the time; moderation is key to indulgence and staying on track. Self-deprivation leads to failure. If you are looking for something to satiate your sweet tooth that is quick, easy, and still relatively healthy, look no more:

Dark Chocolate Fruit and Nut Brittle

  • 5 ounces dark chocolate morsels
  • 1 cup dried berries of your choice
  • 1 cup diced or sliced almonds

  • 1. Place the chocolate morsels in a saucepan over very low heat. Stir constantly until the chocolate melts. Be sure to take off of heat immediately upon melting as chocolate burns easily.
  • 2. IPour the melted chocolate into your small sandwich bag and seal. With your hands, slide the melted chocolate to one lower pocket of the bag and cut a tiny hole in the corner. Gently start to squeeze the chocolate out of the hole and onto the parchment paper, creating small, quarter-sized dollops. Continue to do so until you run out of chocolate.
  • 3. Working quickly, sprinkle different toppings on your chocolate drops using your favorite dried berries and almonds. Don’t be afraid to be creative, making a mix with just berries, some with just sliced almonds, and maybe some with both!
  • 4. You can either leave these on your countertop to harden or just slide into the fridge.

These little sweet dollops of chocolate pack a major punch in terms of health. Some studies suggest that antioxidant-rich foods, such as dark chocolate and berries, could potentially slow the occurrence of cell damage in your body, lowering the risk of disease.

We want you to enjoy your healthy lifestyle journey, so we encourage you to moderately indulge. Put down that piece of cake and opt for this quick and easy recipe. May melting be ever in your favor!
